It's hard being healthy here. From the insane chocolate selection plus the free lunches at work multiplied by new restaurants divided by alcohol - It's a struggle (whilst everything is so new and exciting). When we do cook for ourselves we are trying our best to behave.
Nothing shouts healthy like a fake pizza!
Of course I used The Londoner's recipe for the base - and i'm not going to lie we smashed it!
Here's how we did it and the photo evidence.
What you need:
'Pizza base'
- Cauliflower
- Cheese
- Garlic
- Egg
- A clean tea towel
Topping:
- Whatever you fancy - we used mozzarella, chicken, mushrooms, sweetcorn & red onion with a tomato puree paste
Here we go...
1) Turn your oven to about 190 and prepare the toppings for your pizza.
2) Blend your cauliflower until its broken up into tiny pieces, if you don't have a grater (like us!) you will have to use those biceps and grate your cauliflower into a bowl. Its difficult, but its worth it. No pain no gain girllll.
2) Put a plate over your bowl of grated cauliflower and microwave for 4 minutes
3) Once its ready place the cauliflower onto a tea towel and let it cool whilst you grate a handful of mozzarella
4) Wrap up your tea towel and drain the water from the cauliflower into the sink - this is important, it turns the mixture into a dough and it won't hold well if its retaining water
5) Add your egg, some of your grated cheese and a garlic clove(crushed & sliced) to the mix
6) Mix all the ingredients together until you get 'dough'
7) Line some baking paper with oil and make your pizza base! Make sure its not too thin or it will break easily
8) Pop it in the oven for 10 minutes
9) Add your tomato paste and then go crazy with your toppings
We of course went for a cheesy mozzarella base (we deserve it, there's no bread here!)
Followed by chicken, mushroom, sweetcorn & red onion
Followed by even more mozzarella!
10) Bake your pizza for another 10 mins - keep an eye on it, you might need less
Voila...an almost healthy fake pizza!
